Week 1:

Serves 2
1 onion, chopped
3tbsp olive oil
2 courgettes, diced
2 cloves garlic, chopped
400g can Barlotti beans, rinsed and drained
4 tomatoes, roughly chopped (or 1 tin of chopped tomatoes)
1tsp smoked paprika (this is an essential part od the recipe)
1tsp dried oregano
Pinch of sugar
(Salt, pepper and universal seasoning)
Fry onion in oil, stirring for 3 minutes.
Add courgettes and cook for further 5 minutes, stirring. 
Add garlic, beans, tomatoes, paprika, oregano, sugar and seasoning.
Bring to boil, reduce the heat and simmer for about 10 minutes until the courgettes are tender. Taste and re-season.
Spoon into bowls and drizzle with a little chilli oil, if liked.
Serve with crusty bread.
